Black Bean and Avocado Quesadillas

Ingredients

  • 8 flour tortillas
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 large avocado, mashed or diced
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1/4 cup chopped red onion (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a medium bowl, combine the rinsed black beans, mashed avocado, chopped red onion (if using), cumin, chili powder, salt, and pepper. Mix well to create the filling.
  2. Heat a large skillet or griddle over medium heat. Lightly brush one side of a flour tortilla with olive oil.
  3. Place the oiled side of the tortilla down in the hot skillet. Sprinkle half of the tortilla with approximately 1/4 cup of shredded cheese, then spread about 1/4 of the black bean and avocado mixture over the cheese.
  4. Fold the other half of the tortilla over the filling to form a half-moon shape.
  5. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is thoroughly melted and bubbly.
  6. Remove the quesadilla from the skillet, cut it into wedges, and serve immediately. Repeat steps 2-5 with the remaining tortillas and filling to make 4 quesadillas.
