Black Bean and Avocado Quesadillas

Ingredients
- 8 flour tortillas
- 1 (15-ounce) can black beans, rinsed and drained
- 1 large avocado, mashed or diced
- 1 cup shredded Monterey Jack or cheddar cheese
- 1/4 cup chopped red onion (optional)
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt to taste
- Black pepper to taste
Instructions
- In a medium bowl, combine the rinsed black beans, mashed avocado, chopped red onion (if using), cumin, chili powder, salt, and pepper. Mix well to create the filling.
- Heat a large skillet or griddle over medium heat. Lightly brush one side of a flour tortilla with olive oil.
- Place the oiled side of the tortilla down in the hot skillet. Sprinkle half of the tortilla with approximately 1/4 cup of shredded cheese, then spread about 1/4 of the black bean and avocado mixture over the cheese.
- Fold the other half of the tortilla over the filling to form a half-moon shape.
- Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is thoroughly melted and bubbly.
- Remove the quesadilla from the skillet, cut it into wedges, and serve immediately. Repeat steps 2-5 with the remaining tortillas and filling to make 4 quesadillas.
